Cheesecake

 Hello again!

    I hope you are all enjoying the nice weather outside. We know it is a little rainy but we have spring. We love Spring when all flowers and trees woke up to live. Ula has some flowers in her small garden, and Fang-Yi has some nice trees. We like to enjoy this time of year that is why we are preparing a cheesecake for today. Here you have the ingredients to prepare the cake:
  • 1kg white cheese (it could be Philadelphia or Elite)
  • 1.5 cup of sugar
  • 6 eggs
  • 250 g butter
  • 2 spoons of potato flour
  • 1 spoon of flour
  • 1 spoon of semolina
  • 1 teaspoon of baking powder
  • 1 pack of biscuits
  • 1/2 glass of raisins
    *If you do not have raisins or you do not like them that is ok, you can use slices of peaches or pineapple or just bake plain cheesecake.
    First, we put broil water into our raisins. We are doing that because we want the raisins were soft. If you use other fruits you need them only to slice. In a big bowl put cheese and start mixed with sugar and chopped soft butter to add in batches to the dough. When you have a smooth mass, separate the yolks from the egg whites and add all yolks to our bowl while stirring constantly. 
    At this time, turn on the oven at 355 F / 180 C. Now you can add all our flours with semolina and baking powder to our bowl and gently mix (stir in mixer or use the only spoon). Beat the egg whites with a mixer, after whipping, gradually add to our cake. At the end add your raisins. 
    Our dough is ready, I put baking paper into big baking pans (28 x 23 x 5 cm) and we put biscuits on the bottom then we put the whole dough. We bake for 1h. Enjoy! :)
